I created this recipe with busy families in mind; especially those with kids who need real food that works hard for them.

And if you’re catering to picky eaters or different tastes, it’s easy to adjust: tone down the chilli, swap in your favourite veggies, or add some rice noodles for extra bulk. They also freeze beautifully – just make the chicken and sauce ahead, then defrost and build your wraps when needed.

These Chicken Satay Wraps are a quick, high-protein lunchbox hero – fresh, flavour-packed and perfect for active kids and busy adults alike!

Method

  1. Remove the seeds from the cardamom pods and crush them in a pestle and mortar or spice grinder. Using a blender, add 200g of the yoghurt, the garlic, ginger, lemon rind, cardamom, cumin, chilli seeds, salt and black pepper and blend until you have a smooth paste.

  1. Combine all the sauce ingredients in a medium bowl. Add the chicken and stir so it is coated with the sauce. If time, leave to marinade for 30 minutes or so. Lay the chicken out on a grill pan.
  2. Heat the grill and grill the chicken for 3-4 minutes each side, or until just cooked and golden brown (don’t overcook, you don’t want rubber chicken…). Transfer to a serving dish.
  3. Meanwhile prepare the salad vegetables, coriander and chillis and arrange in separate piles on a large plate.
  4. Heat the wraps according to the instructions on the pack.
  5. Place the chicken, vegetables, wraps and any extras in the centre of the table for each person to assemble themselves. Or alternatively, prepare the wraps, roll each one up and enclose tightly in a piece of tin foil for your lunchboxes.
